How to Recognize an Artisan Paella in Mallorca

In Mallorca, it is easy to find restaurants or services offering paella, but not all paellas are prepared in the same way. There is a big difference between an artisan paella cooked fresh on-site and a commercial paella prepared for large-scale service.

The difference is not always visible in the final photo. Very often, it is found in the process, the cooking time, and the way the paella is prepared.

An artisan paella does not work with automatic cooking times.

The rice master constantly controls:

  • final texture
